Ahead of the G20 Leaders” Summit, Delhi is buzzing with preparations, including the culinary experience that will be offered to the esteemed guests. The Taj Mahal Hotel, a renowned luxury establishment, is set to host key dignitaries and has curated a remarkable menu that highlights India”s culinary diversity. Some of the exquisite creations on the menu include lamb and little millet soup, palm heart, pearl millet, mix mesclun, murgh badam (chicken with almond), and amaranth korma, millet nargisi kofta, and wild rice and pearl millet mousse.
To ensure an authentic culinary experience, the Taj Mahal Hotel has gone the extra mile by flying in a chef from the home country of each delegation staying at the hotel. This thoughtful touch aims to cater to specific preferences and requirements, adding a genuine touch to the dining experience. Chef Arun Sundararaj, the director of culinary operations at the Taj Mahal Hotel, New Delhi, expressed their commitment to offering customisations as needed.
Meanwhile, at the ITC Maurya, where US President Joe Biden will be hosted, meticulous efforts are underway to cater to his likes and dislikes. It has been noted that President Biden enjoys peanut butter sandwiches, and the hotel is all set to serve his favourite home comforts. Additionally, his sweet tooth will be pampered with a delectable selection of ice creams.
The upcoming 18th annual G20 Heads of State and Government Summit, scheduled for September 9-10 at Bharat Mandapam, Pragati Maidan, will witness participation from global leaders. Hospitality has been a central focus of the preparations, with special menus showcasing India”s popular cuisines being promoted at various hotels, including Le Meridien.
While world leaders are set to savor some of India”s finest culinary creations, their spouses will have a unique opportunity to enjoy a millet-based lunch prepared live by three accomplished chefs—Kunal Kapur, Ajay Chopra, and Anahita Dhondy. Among the delectable offerings are a raw banana barnyard millet tikki with puffed amaranth, a flavorful jowar-mushroom khichda, and a millet thekua paired with a lemon shrikhand mille-feuille dessert.
Chef Kapur emphasises the significance of embracing both tradition and modernity, and the use of millets in dishes like khichdi or khichda beautifully captures this blend of heritage and innovation.
